June Good Food Box Contents


June will be our last Good Food Box until the program starts back up again in September 2014.  

This is a win win program, we have received delicious fruits and vegetables each month for $15.00 while at the same time we are supporting working poor family to receive the same box we have at a reduced price.

The Good Food Box is a community program supported by the Public Health Units in Ontario CA.   The Good Food Box program was established 20 years ago as a way to provide low income families with fresh fruits and vegetables throughout the year and is available in most major centers through out Canada.  
Spinach


 Spinach and Orange Salad (4 servings)

Ingredients:
  • ½ lb fresh spinach, torn in to bite-size pieces
  • 2 medium oranges
  • 2/3 medium red onion
  • ¼ cup French salad dressing


Directions:
  1. Wash spinach thoroughly and allow to dry.  Tear into bite-size pieces.
  2. Peel oranges, then section and remove any seeds.  Slice onion and separate into rings.
  3. Combine spinach, orange sections, and onion in a large salad bowl, tossing well.
  4. Drizzle dressing over salad, toss gently.
Strawberry Spinach


Spinach, Ham and Cheese Omelet (1 serving)

 Ingredients
  •  2 eggs
  • 2 Tablespoon water
  • 1 teaspoon butter
  • ¼ cup shredded cheese of your choice
  • ¼ cup spinach
  • ¼ cup finely chopped ham
  • Salt and pepper to taste.


Directions:
  1.  Beat eggs and water in small bowl until blended
  2. Heat butter in a non-stick pan or skillet over medium-high heat until hot.  Tilt pan to coat bottom.  Pour in egg mixture.  Mixture should set immediately at edges.
  3. Gently push cooked portions from edges toward the centre so that uncooked eggs can reach the hot pan surface.  Continue cooking, tilting pan and gently moving cooked portions as needed.
  4. When top surface of eggs is thickened and no visible liquid egg remains, season with salt and pepper.  Place cheese on one side of omelet.  Top with spinach and ham.  Fold omelet in half.

Contents of the May 2014 Good Food Box
The Good Food Box is a community program supported by the Public Health Units in Ontario CA.   The Good Food Box program was established 20 years ago as a way to provide low income families with fresh fruits and vegetables throughout the year and is available in most major centers through out Canada.  


This month the Good Food Box came with the following two recipes:

Oven Roasted Potatoes

Ingredients (6 servings)
6 medium potatoes, scrubbed and cut in to 1 ½ inch pieces
¼ cup butter, melted
½ teaspoon salt
1 garlic clove, minced

Directions:

  1. Heat oven to 375 degrees
  2. Place potatoes in a baking dish
  3. In a small bowl, combine remaining ingredients.  Pour mixture over potatoes and toss well.
  4. Bake for 55-60 minutes or until the outside is crisp, lightly browned and the inside is tender.  Stir twice during baking


Easy Potato Soup

Ingredients
4 large potatoes
1 cup chopped celery
1 cup chopped onion
1 ½ cup milk
Salt and pepper to taste

Directions:                          

  1. Peel and cube potatoes
  2. Put in a saucepan along with the onions and celery.  Add water, but don’t quite cover the vegetables.
  3. Bring to a boil, lower heat, cover and simmer for 25 minutes, or until all of the vegetables are very tender.
  4. Using a potato masher, coarsely crush the potatoes, but don’t mash them – you want chunks left.
  5. Add in the milk and salt and pepper to taste.

April 2014 Good Food Box



The Good Food Box is a community program supported by the Public Health Units in Ontario CA.   
Established approximately 20 years ago the original mandate was to provide low income and the working poor with fresh fruits and vegetables through a cooperative like program. 
Families pool their money and with the increase purchasing power a buyer travels to the Toronto Food Terminal and purchases in bulk.  In this way the families get their fruits and vegetables for less than what they would be forced to pay at local grocery stores.
The program was later opened up to everyone increasing the buying power of the group.  The Good Food Box is $15.00 per month with anyone making under $30,000 annually paying $12.00, the Public Health Unit subsidizing other $3.00 per family.
Currently our local Good Food Box outlet puts together between 118 and 120 boxes per month with approximately 30 of the boxes being subsidized.

This months  handout came with a wonder mushroom and potato recipe.  
Mushrooms

Creamy Mushroom-Potato Bake
Ingredients (8 servings)
2 1/2 lb potatoes, peeled and cubed
1 tsp of salt
1 medium onion, finely chopped
1/2 lb fresh mushrooms, chopped
1/2 cup sour cream
1/4 tsp pepper
1/4 cup grated Parmesan cheese
Directions
  1.  Place potatoes in a large saucepan and cover with water.  Add 1/2 tsp. salt.  Bring to a boil.  Reduce heat; cover and cook for 10-15 minutes or until tender.  Drain and mash.
  2. In a large skillet, saute onion and mushroom in 2 tbsp of butter for 3-4 minutes or until just tender.  Stir into potatoes along with sour cream and remaining salt.
  3. Spoon into a greased 2 qt. baking dish.  Sprinkle with cheese
  4. Bake, uncovered, at 400 degrees for 20 - 25 minutes or until heated through and golden brown.

Note: I used the leftover mashed potatoes from our Easter Feast and added the onions, mushroom, sour cream and cheese.  Everyone loved them and asked for these instead of the traditional mashed potatoes.  I would have included a picture only left over mashed potatoes baked mushrooms does not photograph well and it take great!
