Christmas Macaroons

Christmas Macaroons with carrots

  • 1 ½ cups shredded coconut
  • 1 cup grated carrots
  • ¼ cups maple syrup
  • ½ cup tapioca flour
  • ¼ tsp. vanilla

  1. Mix all of the ingredients together.
  2. Using two spoons drop small mounds of the batter onto a greased cookie sheet
  3. Bake at 350 °F for between 20 and 30 minutes.
