Vegan Pumpkin Chili

Vegan Pumpkin Chili

Foodie Friday

Ingredients:
  • 2 onions chopped
  • 2 garlic cloves minced
  • 2 Tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon cinnamon 
  • 1 teaspoon oregano
  • 1 teaspoon tumeric 
  • 4 cups cubed raw pumpkin
  • 1 cup diced mushrooms
  • 30 oz. vegetable broth (homemade or store bought)
  • 18 oz. can of Chick Peas
  • 18 oz. can of Black Beans
  • 18 oz. can of Baked Beans 
  • 5.5 oz. can tomatoe paste
  • 28 oz. diced tomatoes



Directions:
  1. Sauté onions and garlic
  2. Mix all ingredients in a large pot
  3. Heat all ingredient to a the boiling point and reduce to a simmer
  4. Reduce until chili is the desired consistency
