Blueberry Chia Mousse Vegan




Salvia hispanica or Chia is called by some to be the healthiest food on the earth and if not the healthiest it is among the healthiest.  Chia seed are packed with antioxidants, fiber, protein, and omega-3 fatty acids. 

We have been including chia seeds in our diet whenever possible.  We replace eggs in our baking with chia seeds, we thicken puddings and pies with them.

Today’s recipe features blueberries, and chia seeds together for a double antioxidant hit, when you add coconut milk and honey it is also a vegan and gluten free dish.

Blueberry Chia Mousse

Ingredients:
  • 2 cups blueberries
  • 1 cup coconut cream
  • 3 tablespoons honey
  • 1 cup orange juice
  • 3 tablespoons of Chia seeds


Directions:
  1. Blend the first 4 ingredients together
  2. Add chia seeds and place in the refrigerator for 3 hours.
  3. Serve.

What Do You Read?



Reading when you don't have too, what is that?

OK, I am being facetious however if you have to read numerous reports a day plus stay abreast of the the latest research in your field, reading as a recreational activity can seem overwhelming.

Many people in this situation look to the television to provide recreational storytelling.

In our home books-on-tape, Audible, provides us the answer.  
We listen to storytellers while we engage in our faviourite crafts.

Vacations provide a time-out from demanding work reading and holding a paper book in our hands becomes a thrilling time, one we both look forward to.

We save the best books for actual reading when picnic's provide a great opportunity to escape into the pages and be transported to another place, to become someone else.

My Soul Is Satisfied




If each of God's blessings were a drop of water, we would all swim in the ocean of God's love, because there would be no dry ground on which to stand!
  
And yet we live each day within just such an ocean love, if only we would recognize it for what it is God’s covenant to us.

Not matter where we travel God has our backs and travels with us.  God follows us into whatever sin we travel into or horror life thrusts upon us.  

When we thirsteth we need only incline our ear to hear God’s love all around us, open our hearts and drink in his love.

With courage and grace we need only accept what we do not deserve and we cannot earn: God’s forgiveness and love. 


1Ho, every one that thirsteth, come ye to the waters, and he that hath no money; come ye, buy, and eat; yea, come, buy wine and milk without money and without price.  2 Wherefore do ye spend money for that which is not bread? and your labor for that which satisfieth not? hearken diligently unto me, and eat ye that which is good, and let your soul delight itself in fatness.  3 Incline your ear, and come unto me; hear, and your soul shall live: and I will make an everlasting covenant with you, even the sure mercies of David.
