Rice Pudding



As cool fall nights turn into even colder winter evenings thoughts turn to the smell of wood smoke hanging in the air that signals the warmth of the kitchen table and hot rich desserts.  In the homes that we grew up in this meant rice pudding. 

Today we are featuring a dairy free, vegan rice pudding and we chose basmati rice to add a nuttier flavour.  

Hands down basmati rice is our favourite.

Basmati rice falls within the ‘medium glycemic index which makes is a healthier choice for everyone and specifically anyone with diabetes.  One cup of cooked basmati rice is 190 calories compared the same amount of cooked white rice that comes in at 204 calories.

The earliest recorded mention of basmati rice according to Wikipedia is in 1766 and basmati rice traditional is grown in India and Pakistan.


Rice Pudding

Ingredients:
  • 2 cups of basmati can rice for the rice that you prefer.
  • 1/2 cup raisins
  • 1 teaspoon vanilla
  • 7 cups almond milk or milk substitute
  • 4 tablespoons spoons maple syrup
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 2 1/2 teaspoon cinnamon

 Directions:
  1. Soak rice and raisins for half an hour and drain
  2. Fill the bottom pot of double boiler ½ full with water and bring to a boil
  3. Into the top saucepan combined the rice, raisins, vanilla, almond milk, maple syrup, ginger, nutmeg, and cinnamon.
  4. Place the top sauce pan in the bottom pan and stir the now liquid rice pudding
  5. Stir often while the rice is cooking and once the pudding starts to thicken stir constantly to prevent burning.
  6. Should the rice absorb all of the liquid add more ½ cup at a time to ensure your pudding is not too runny yet creamy
  7. Once the rice is cooked serve

Frustration



Frustration!

You can substitute; prevention, hindrance, blocking, foiling, defeat, obstruction, thwarting for the word frustration and those are only the words that Microsoft Word provided.

 And the opposite of frustration is success.

Today was a very frustrating day, it was a day that depleted personal energy and gave very little in return.

Today was a day where old behaviours prevented success, 
where lack of awareness hindered success, 
success was blocked by not being mindful of repeated patterns, 
where habitual responses foiled success ….

In reflection it was a day where old behaviours and strategies were repeatedly applied to new situations, each time with the expectation that success would be achieved and where frustrated failure resulted.

Einstein would say a day spent in the pursuit of insanity and by the end of the day that is what it felt like.

Did other people cause this frustration? 

To say yes would be give personal power and choice away. 

No people cause their own frustration and there in lays the path to success.

Taking ownership of being frustrated, be mindful of your expectations, repeated patterns of behaviours and leave insanity behind.

His Life An Offering



When we think of Christ’s ministry we call up pictures of the homeless, beggars, widows, orphans, disabled, and the prostitute all outcasts of Christ’s time in history.  

Yet in preparation for this post we continued to be a struggle with the “who” of Christ’s ministry.  

How do we the advantaged of today’s world fit into Christ’s ministry? 

The conventional answer is that Christ ransomed us from our sin through his death on the cross and again the verses this week would not let this be the entire answer. 

While we continue to struggle with the answer the actual questions to be asked are clear.

  1. How are we the advantaged of society homeless, for we are working long hours to have the funds to purchase more, or we sit at meals with our children texting on our smart phones where are our homes?
  2. How are we widowed from those we love including God?
  3. How are we orphaned from human connection and through this connection from God?
  4. How are we disabled, blind to the things that are separating us from the richness of a life lived in the full presence of God?
  5. What are we steeling ourselves too in this life that separates us from God?



Christ wants to minster to us today he is offering his life to us now so we can live fuller lives now.  

Christ desires to minister us as he did to those of old if only we recognize the things that have made us outcasts of the fullness of life now.
