Tuna Melts

Grandpa’s Tuna Melts

 

This is one of Grandpa’s specialties and the go to meal when comfort food is in order. 

Ingredients:
  • Bread (Grandma’s is always made on gluten free bread)
  • 1 tin of water packed tuna
  • 1 small onion chopped
  • ½ red pepper chopped
  • ½ cup cucumber chopped
  • 1 carrot finely grated
  • 1 tablespoon relish
  • 2 tablespoons light mayo
  • Cheese slices or shredded cheese


Directions:
  1. Chop all of the vegetables
  2. Drain and add the tuna to the vegetables along with the mayo and relish
  3. Mix well
  4. Toast 8 slices of bread
  5. Divide the tuna mixture on the 8 slices of bread and top with cheese
  6. Bake in a 350 °F oven for 10 or until the cheese browns
