We use this recipe many ways, as a sauce over paste, chicken or just as a side dish.
Ingredients:
- 1 onion chopped
- 4 garlic cloves minced
- 3 tablespoons coconut oil
- 2 lbs of your favourite mushroom sliced
- 4 cups of vegetable broth
- Salt and pepper
- Grated parmesan cheese to taste
- Fresh basil
Directions:
- Add oil to a large frying pan
- Sauté the onion and garlic until onions are transparent
- Add mushrooms to frying pan and sauté for 5 minutes
- Reduce heat to medium low
- Add vegetable broth and simmer until the broth reduces to the consistency of a thick sauce.
- Add salt and pepper to taste
- Top with grated parmesan cheese and fresh basil
