Hollyhocks my Grandfathers Home


As Grandparents, Great Aunts and Uncles we hold the family history for our grandchildren, grandnieces and nephews, stories that as younger adults we were too busy building families, careers, our lives to perhaps have shared with our children.

We now have time to tell our stories of grandparents, summer vacations our childhoods. Today I was surprised by how much of my childhood I have surrounded myself with like the hollyhocks.

Strawberry Shortcake Gluten Free

Gluten Free Strawberry Shortcake


The strawberry season is quickly coming to an end in Ontario Canada and before it is over I want to share with you this wonderful dessert and truth-be-told sometimes Sunday evening supper.

I thought that it would be easy to create a gluten free shortcake using gluten free Bisquick™ and it was until I ran out of gluten free Bisquick™.  I was 1 cup short and so I added 1 cup of rice flour and 1 teaspoon of xanthium gum.
Gluten Free Strawberry Short Cake

Through the Google+ community I have come to know Instant Healthy Living and through them to 5 minute vegan homemade sugar free ice cream – an easy and delightful dairy alternative for ice cream.  

We now buy up those discounted brown bags of banana’s from our local grocery store, cut the bananas into small pieces and put them in the freezer and like magic we can have ice cream whenever we want!  Thank you Instant Healthy Living.

Gluten Free Shortcake


Ingredients:
1 ½ cups Gluten Free Bisquick™
1 cup rice flour
1 teaspoon xanthium gum
½ cup of Almond milk
2 tablespoons of liquid honey
3 tablespoons of coconut oil melted

Directions:
  • Heat oven to 425 °F
  • Mix all of the ingredients together until a soft dough forms it you need to add extra almond milk if the batter is to dry.
  • Drop the batter onto an ungreased cookie sheet approximately the size you want your cakes to be.
  • Bake 10 to 12 minutes until the cake begin to turn a light brown on top.


While the shortcakes are baking clean your berries and make your Banana Ice Cream.

Mother Teresa God's Love

I can understand the greatness of God but I cannot understand his humility.  It becomes so clear in him being in love with each one of us separately and completely.  It is as if there is no one but me in the world.  He loves me so much.  Each one of us can say this with great conviction.  ~ Mother Teresa  

As a mother and grandmother I love each of my children and grandchildren deeply, personally and with all of my being and this is only a shadow of the love Mother Teresa is describing that God has for each of us.  

Sit with these words for a few minutes 

God is in love with you separately from every other human being and completely, There is no one but me in the world, he loves me so much! 


Open yourself to the creators all encompassing love for your.

William Blake has provided a wonderful poem that my grandchildren found delightful and an opportunity to talk about our Christian beliefs. 

As (grand)parent we want our (grand)children to experience the beauty and wonder that poetry and music bring to our understanding of the world around us and to our spiritual lives.  

It is important that we experience poetry with our (grand)children at every opportunity.
