Fresh Spring Salad

Fresh Spring Salad with Figs

Late spring is abundant with fresh greens, and to these we add dry figs, tomatoes, avocado and you add your favorite salad dressing. 

Ingredients:
  • Spinach
  • Kale
  • Asparagus 
  • dried figs 4 diced
  • 1 avocado cubed
  • cherry tomatoes or 2 medium tomatoes cubed

You decide on the quantity and ratio of spinach to kale, and the amount of asparagus.  We took this salad to a family reunion with a variety of salad dressings, we brought none of it home.

For the past six months I have looked at the sky above me, initially it was to decide the colour combination I would knit and with each passing day I discover new vistas in the blue that surrounds this small planet of ours.  Each sky tells a story of its own never the same colours or spaces.
