From
Aunt Marjorie’s handwritten recipes
Memories of Sour Cherry steamed pudding with ice cream found
their way into my consciousness this summer as we walked the stalls at the
farmers market and saw the baskets of cherries.
I have Aunt Marjorie’s recipes in a special box in our
library (Aunt Marjorie will be 95 in a few days) and I found her recipe. This is how the original recipe is written…
Cherry Pudding1 egg (beat) add 1 ½ cups sour cream, 1 tsp soda, about 2 ½ cups flour, 1 tbsp. B. sugar, pinch of salt, 1 ½ cup sour cherries. Steam 1 hr. 1 tsp B. Powder sweet milk.
My ingredients:
1 egg beaten
1 ½ cups vanilla none dairy coconut
milk yogurts (this is instead of sour cream)
1 tablespoon honey or sweetener of your choice (optional)
1 tablespoon honey or sweetener of your choice (optional)
2 cups Gluten Free Bisquick™ (this takes the place of the flour, soda and baking powder)
1 ½ cups sour creams (thawed
with juice)
Directions:
Mix all the ingredients
together and place in a glass oven proof bowl
Place this bowl inside a larger
over proof dish filled with water
Place in a 400 °F oven for one
hour or until your pudding is cooked through.
The result is a moist dense pudding that can be eaten with ice cream, milk or maple syrup.
