Macaroni, Tomato and Cheese

Foodie Friday

As the temperature dips and we scrape frost off the car, thoughts turn to comfort food and macaroni and cheese is on that list for our family. 
  • 1 ½   cup cubed Swiss cheese
  • 1 ½ cup cubed Old Cheddar
  • 2 cups dices tomatoes with juice
  • 1 teaspoon turmeric
  • ½ teaspoon chili pepper
  • 2 tablespoons chia powder
  • 1 package GF noodles – we use Red Lentil Fusilli from Homestyle 

  1. Cook the noodles as per package instructions
  2. While the noodles cook mix ½ of the diced tomatoes/juice with the cheese.  You can either melt the cheese in a pot over the stove or in the microwave.
  3. Mix the chia powder, chili pepper and turmeric in the remaining diced tomatoes
  4. Mix together the cooked noodles, melted cheese mixture and diced tomatoes and pour into a 9 x 11 baking dish
  5. Bake for 30 minutes in a 375 °F oven.

A Halloween Costume

A Halloween Costumes

For the past month our granddaughter has picked fabric from my stash only to change her mind, a different colour, a different texture and always the same goal in mind – she is going out for Halloween as a pirate princess and tonight we bring together all of the individual pieces and create the costume.

Great John brought over a box of scrap fabric that had been in basement for years and the girls had a great time helping us wash and fold the fabric.  Here she found the first piece of fabric for her costume faded denim.

Next she settled on the purple silk that was used in her flower girl dress. 

I have always been in favour of purchasing what clothing you are able to that can be reused and worn every day and in this costume we purchased a white long sleeved top and purple tights.

Remain Relevant as a Grandparent

Is having a bucket list a good thing? 
Is a list of things that you want to do before you die important?
What is important is that no matter how old we are that we continue to grow.  
That we experience life and embrace the opportunities that are within our reach.


In staying engaged in our lives, staying active, curious and alive we are setting a positive example for our children and grandchildren.

We are teaching them that in old age we remain relevant.

Begin a journey that you have been putting off in your bucket list.
